Ingredients Needed
- 1 stick butter
- 4 cups shredded chicken (I use rotisserie)
- 1 (12 ounce) bag frozen mixed vegetables
- 1 (11.36 ounce) box Red Lobster Cheddar Bay Biscuit Mix
- 2 cups whole milk
- 1 (14.5 ounce) can chicken broth
- 1 (10.5 ounce) can cream of chicken soup
- seasoning to taste

Step 1
Grease the sides of a large 9×13-inch baking dish and spread ½ cup of melted butter across the bottom. Arrange the shredded chicken evenly over the melted butter in a single layer.

Step 2
Spread the frozen mixed vegetables evenly over the chicken. Sprinkle your preferred seasonings on top. Garlic powder, onion powder, and black pepper work well. Avoid adding too much salt since several of the other ingredients already contain salt.

Step 3
In a medium bowl, whisk the Red Lobster Biscuit Mix and its included seasoning packet with 2 cups of whole milk until combined. Pour the mixture evenly over the vegetables. Do not stir.

Step 4
Using the same bowl, whisk together the chicken broth and cream of chicken soup until smooth. Pour the mixture evenly over the biscuit layer. Do not stir.

Step 5
Bake the casserole uncovered on the center rack of a 375°F oven for 55–65 minutes, or until the top is a rich golden brown. Take it out of the oven and let it rest for about 10 minutes to give the sauce time to thicken.

This delicious casserole brings all the cozy flavors of a classic chicken pot pie in an easy-to-serve dish, making it perfect for feeding a crowd. The Red Lobster Cheddar Bay Biscuit Mix adds incredible flavor and bakes into a golden, cheesy crust that’s absolutely irresistible. Paired with creamy chicken and tender vegetables, this comforting meal is a family-friendly favorite—even for picky eaters.

Ingredients
- ½ cup butter (1 stick, melted)
- 4 cups shredded chicken (rotisserie chicken works great)
- 1 (12 oz) bag frozen mixed vegetables
- 1 (11.36 oz) box Red Lobster Cheddar Bay Biscuit Mix
- 2 cups whole milk
- 1 (14.5 oz) can chicken broth (about 2 cups)
- 1 (10.5 oz) can cream of chicken soup
- Seasoning to taste (garlic powder, onion powder, and black pepper)
Instructions
- Preheat the oven to 375°F and grease the sides of a large 9×13-inch baking dish.
- Melt the butter and spread it evenly across the bottom of the prepared baking dish.
- Arrange the shredded chicken in an even layer over the melted butter.
- Spread the frozen vegetables evenly over the chicken, then sprinkle with your preferred seasonings. Garlic powder, onion powder, and black pepper work well. Use additional salt sparingly.
- In a medium bowl, whisk together the milk, Cheddar Bay Biscuit Mix, and the seasoning packet included with the mix. Pour the mixture evenly over the chicken and vegetables. Do not stir.
- Using the same bowl, whisk together the cream of chicken soup and chicken broth. Pour this mixture evenly over the biscuit layer. Do not stir.
- Bake uncovered on the center rack for 55–65 minutes, or until the top develops a deep golden-brown color. Since ovens vary, start checking around 55 minutes.
- Remove the casserole from the oven and let it rest for about 10 minutes before serving. This gives the creamy sauce time to thicken.
Notes
- Make it cheesy: Sprinkle 1–2 cups of shredded cheddar cheese over the frozen vegetables before adding the biscuit mixture.
- For the best results, allow the casserole to bake long enough for the biscuit mixture to rise to the top and cook completely. Wait until the crust reaches a deep golden-brown color before removing it from the oven.
- Many of the ingredients already contain salt, so you may not need to add much extra. Adjust the seasoning according to your family’s preferences.
- Frozen broccoli makes a delicious alternative to mixed vegetables, but you can use any combination of your favorite vegetables.
- Rotisserie chicken is my go-to because it’s convenient and flavorful, but you can use any cooked shredded or chopped chicken you have on hand.
