If you’re looking for an easy meal for your picky family, you’ve got to add this creamy chicken and rice casserole to your dinner menu!

Ingredients

  • 1½ pounds chicken breast
  • 2 cups Minute Rice, white or brown
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can water, using one of the soup cans
  • 1 envelope Lipton Onion Soup Mix
  • 1 tablespoon butter

Instructions

In a medium-sized bowl, combine two cups of uncooked Instant rice, both cans of creamy soup, and one can of water.

Place the rice mixture into a generously buttered 9×13 baking dish, then place the chicken breasts directly on top of the mixture.

Evenly sprinkle the Lipton Onion Soup Mix over the chicken. You can also add black pepper or other seasonings if you like, but there’s really no need. The onion soup mix is packed with flavor, and the soup already contains plenty of salt.

Cover the pan with foil and bake in a 350° preheated oven for 1–1½ hours, or until the chicken is cooked through. Be sure to leave the foil on the dish for at least an hour while it’s in the oven so the rice can steam and fully cook. I suppose that’s why it’s called no peek chicken!

Serve this yummy chicken dinner with your favorite side of vegetables and watch as everyone cleans their plates! This easy recipe is perfect for feeding a large family with kids, especially if you have picky eaters at home who make dinner time feel like the hardest task of the day.

For a quick, healthy side dish, we like to air fry broccoli with a little olive oil and seasoning, but any seasonal veggie would complement this flavorful chicken and rice.
